Butternut Squash & Poblanos

Confession... I ate an entire butternut squash yesterday. By myself. Ope! My fav part about growing food is talking to you guys about food at the market!! Wednesday at the Horicon mkt, someone told me all about how amazing poblanos and butternut squash are together! So of course I went home and roasted them up with some onion, oil, salt, pepper and brown sugar! I added minced garlic too, but I always add garlic after the cooking is done bc I've burned too many garlics in my life, and it really just needs to be warmed up to let its aromatics out anyway. Then I did a test sprinkle of chili powder, it was good with or without!! I'll be bringing poblanos, squash, onions and garlic tomorrow!
