Green Tomato Pie

Tastes like apple pie with a little tang I never do a double crust, I'm a crumble kinda gal!


Slice 3 medium green tomatoes pretty thin. Mix 1.25c brown sugar, 1/3c flour, 1/2t nutmeg, 1/2t cinnamon, 1/4t salt. Then whisk in 2T lemon juice, add the tomatoes and mix around until they're coated. Put your pastry crust in your pie pan or tart pan, then add the green tomato goodness. Now make a quick topping: 1/2c oats, 1/4c brown sugar, and 1/2t cinnamon. Stir it up and sprinkle on top!


Bake at 425 for 15min, then reduce temp to 350 and leave it in for about 40 min longer. When the bottom crust looks done, your pie is done!
