Longevity Stew

I've been tapping into my pantry with all this wintery-ness... and this is one of my fav meals featuring stuff from a can! I make it whenever I have an amazing fennel bulb! Slice up your fennel and an onion, sometimes I add celery if I have some! Sautee in oil until soft but you don't have to brown it. At this point I add in lots of garlic: 4 cloves, or 2 of my mega cloves! Grate it on a microplane, its the easiest way I've found to mince garlic! One literal minute later, add in a can of beans and a can of diced tomatoes. I've done this with blackeyed peas, white beans, and here I have garbanzos in my dinner! Mix it up and add a little can of tomato paste, season with salt and pepper. Stir in a lot of oil, a quarter cup makes this a super silky, luscious, saucy dish! After this is all heated thru, stir in as much chopped dill as you want, you can even sprinkle more on top for a beauty shot! If I want to make this even heartier, I add cooked rice and some meat. Chopped chicken or sausage taste good in here!
